Caramelized Onion and Roasted Garlic Pasta Recipe

This spaghetti with caramelized onions and roasted garlic is perfect for the time of year when summer is winding down and comfort food is beginning to find its way back into the menu board. Short pasta dipped in a sauce made of caramelized onions and roasted garlic takes on all the warm and comforting characteristics of autumn. Even though it requires a lot of time and effort, it is well worth it.

Ingredients

Roasted Garlic

  • Two heads of garlic, that have been peeled and divided into cloves
  • Olive oil, six tablespoons based
  • Two or three sprigs of fresh thyme

Caramelized Onions

  • a one big white onion, cut very thinly
  • Butter, two tablespoons’ size
  • Olive oil, three teaspoons –
  • 24 ounces of water
  • Balsamic vinegar, one tablespoon’s worth
  • half of a teaspoon of white sugar
  • a half teaspoon of salt
  • 1/2 teaspoon of black pepper that has been freshly ground
  • Pasta with a Red Sauce
  • 8 fluid ounces of heavy cream
  • A roasted garlic bulb or two to five
  • a quarter cup of chopped parsley, split into quarters
  • 1 cup of grated Parmesan cheese, divided into equal parts
  • Gemelli or another type of short pasta is 8 ounces.

Directions

Step 1

Preheat the cooking temperature to 250 degrees Fahrenheit (120 degrees Celsius) in order to roast garlic. Olive oil should be used to coat the garlic cloves that have been placed in a baking dish that is shallow. Put the thyme sprigs on top of the oil and set them aside.

Step 2

Bake in an oven that has been prepared until it reaches a golden brown color, which should take approximately an hour. With a fork, garlic should be able to be readily mashed. After removing the garlic from the oil, set it aside. Oil should be saved for another use.

Step 3

In order to caramelize onions, heat a pan that is large enough over medium heat. Mix with some butter and olive oil. To ensure that the onions are evenly coated, add them to the pan and toss them. In order to ensure that the onions cook evenly, stir them constantly and move them around.

Step 4

Add the water, vinegar, sugar, salt, and pepper to the onions once they have begun to turn a light shade of color, which should take around fifteen minutes. For approximately fifteen more minutes, continue stirring the onions on a regular basis until they are totally soft, have a golden brown hue, and have been reduced by at least half. Reduce the temperature to a medium-low setting.

Step 5

Bring a big saucepan of water that has been just mildly salted to a boil. After approximately 11 minutes, add the gemelli and continue to cook it while tossing it regularly until it is cooked but still firm to the bite.

While this is going on, add cream, four to five cloves of roasted garlic, one tablespoon of parsley, and half a cup of Parmesan cheese to the onions, and mix to blend. Keep the remaining garlic that has been roasted for another use.

Step 6

Place the spaghetti on four dishes after draining it. About a quarter cup of sauce should be spooned on top, and then additional Parmesan cheese, herbs, and black pepper should be sprinkled on top.
